Park City Breast Reduction

This is a personal favourite of my partners, in fact when I made it for myself the other day while she was out with her friends she was not best pleased. It’s quite an easy dish to make and shouldn’t take too long.

I think it’s Italian in origin although I have also seen Swiss (using stuffed chicken thighs) and Jamaican (often baked rather than pan fried) versions of the dish!
